- 250g Fresh tomatoes- mix of cherry, heirloom and roma- sliced in rounds
- ¼ cup red wine vinegar
- ¼ cup Olive oil
- Salt and pepper
- 1 Garlic clove- crushed
- Fresh basil leaves
- Fresh oregano leaves
- 100g Fresh Pecorino Fresco – grated
- In a large mixing bowl mix together the olive oil, red wine vinegar, garlic and salt and pepper to form a dressing. Add in the tomatoes and dress gently. Place on to a flat plate, season with fresh herbs and freshly grated cheese.
- Serve with grilled bread as an entrée or as a side to BBQ meat for a meal.
