Italian Bruschetta with basil & pan fried Quesso Fresco

  • 1 Red capsicum
  • ½ a Continental Cucumber
  • 1 Red onion
  • 4 Roma tomato
  • ½ cup of Parsley
  • ½ cup of Basil
  • ½ a Zucchini
  • 4 slices of Ciabatta loaf
  • 2 cloves of Garlic
  • ½ a cup Olive oil
  • 1 tbs Balsamic vinegar
  • Salt and pepper


  1. Finely dice the capsicum, tomato, cucumber, zucchini, onion, basil and parsley- set aside in a bowl.
  2. Mix together the oil, vinegar and salt and pepper and dress the above salad
  3. Char grill the Ciabatta loaf on both sides, rub one side with the garlic clove to flavor the bread- set aside and keep warm.
  4. Slice the Riverina Fresco cheese into 1cm x 8cm slices and grill on the same chargrill plate on each side until golden
  5. To assemble place the bread, cheese and then salad on top, delicious!
