Pumpkin Dip

  • 500g diced Pumpkin
  • 2 tbs of Olive Oil
  • 1 tsp. of crushed garlic
  • ½ cup Riverina Dairy Natural Yoghurt
  • 1 tsp. of ground cumin seeds
  • Salt and pepper
  • Squeeze of fresh lemon


  1. Pre heat the oven to 150°C
  2. Place the pumpkin, crushed garlic, ground cumin and olive oil into a bowl and coat the pumpkin well, roast for approx. 25 minutes or until tender- we do not want any colour on the pumpkin
  3. Take the pumpkin out of the oven and cool slightly
  4. Combine the pumpkin mixture in a food processor with the Natural Yoghurt to a fine consistency, season to taste with salt, pepper and fresh lemon juice
  5. Great with crackers, toasted breads or as a sandwich filling with poached chicken and dressed greens
